Parador de Olite Hotel - Navarra

Whilst in the region, one should take the opportunity to visit the city of pamplona. The Parador backs on to the palace-castle which has been declared a National Monument.

Maintaining the medieval style, some of the rooms have four poster beds, arches and other typical signs of that age.

Guests can sample some of the typical cuisine of the region, such as 'las magras con tomate', 'las costillas asadas en parrilla' (grilled ribs), and 'el conejo con caracoles' (rabbit with snails). For dessert there are 'las coronillas de pamplona' and 'las alpargatas de peralta y Estella'.

The interior decoration is as impressive as the solid facade, with forged iron lamps, armours, tapestries, carved wood ceilings, large trunks.

With gothic style and appearance, this building was finished by the end of the 15th century and was then chosen by the king of navarre to spend his summers and retirement in the superb grounds and halls.
