A strong emphasis is placed on traditional style, which in Edinburgh typically means a Scottish-French style dating back to the 13th century, arising from what was known as the ‘Auld Alliance’ (against the English). As in the Scottish-French style, dishes typical of this cuisine are also created with Scottish produce with an Asian, French or Mediterranean flair.
