‘Balti’ features prominently on many local menus: it is a fiery Indian curry actually developed in Birmingham in the 1970s. The name comes from the steel pan used for preparing the dish. An area known as the ‘balti triangle’ is located in the Ladypool and Stratford road area, just outside the city.
The dish was introduced originally at cafe-style eateries by members of Birmingham's Kashmiri and Pakistani communities. A complex combination of pungent herbs and spices combined with rapid cooking over a hot flame are basic to ‘balti’ – which is typically served with naan.
