Tourists often make the mistake of frequenting the same hangouts and choosing local food from menus that have been pretty much tailored to suit European/North American palates and hence they often miss out on some of the more unusual dishes available. Heading for the eateries that are busy with the locals is a safer bet if authenticity is a priority.
For slightly more upmarket fare, the international hotels are always a safe bet, serving quality Egyptian food as well as international cuisine and generally offering full bar service with imported beverages. For those watching what they spend, Cairo is full of street restaurants and vendors where the ambience might not be especially hi-so but the food is as authentic as you are likely to get.
Local cuisine
Cairo’s cuisine tends to follow the national style which has similarities with Middle Eastern and Eastern Mediterranean cuisine, as well as some distinct characteristics of its own. The national dish is generally considered to be ful medames which is essentially mashed fava beans with olive oil, parsley, onion, garlic and lemon juice.
Kebabs are also popular and ubiquitously available, as is kofta (balls of minced or ground meat); both are traditionally eaten with salad and pita bread.
