Beijing cuisine is closely related to the cuisine of Shangdong which is based on various wheat creations and pungent vegetables such as cabbage and kale. Many dishes are steamed, stewed or stir fried and flavoured with dark soy sauce, garlic and spring onions. Peking Duck is perhaps the city’s most famous dish and is prepared by stuffing the bird then cooking it slowly in a fire oven before being served with pancakes, cooked spring onions and a brown sauce made from soy. Peking Duck can be found at all of the city’s best restaurants.
